Hi. I am Elizabeth.

Welcome to my blog. I use this little space to chronicle the adventures of the Noel family!

my favorite taco recipes

my favorite taco recipes

So, as you may have figured out from my blog- I love tacos. Like LOVE tacos. So today, I am counting down my favorite tacos to make at home. We make tacos at least once a week around here. Many of these recipes I found on Pinterest when searching for new taco recipes.

5- Turkey Taco Lettuce Wraps- These are a healthy version of tacos that we eat regularly. I am a fan of the skinnytaste recipes, and this one does not disappoint.

4- Carnitas- I made these for Bryan's birthday party last year, and since then they have been on repeat. My bestie even made them when we visited their home! I usually add a few extra chipotle peppers since we like things spicy around here.

3- Tortilla Pie- This is not a traditional taco, but it includes all the taco components. Good for a crowd! It is on the healthier side as well!

2- Taco Pizza- Again- not a taco, but it has all the taco components and we make this one all the time. Super budget friendly too! This is originally a pioneer woman recipe, but I add a can of corn (or fresh corn in the summer), and a can of rotel tomatoes with green chilies between the black beans and the cheese. It kinda kicks it up a notch- and makes it a little spicier- which is a thing in the Noel home.

1- Pineapple Chicken Tacos- I got this recipe from a sweet instagram friend. We went to her house, and she made these tacos for us and they were so good! They are a crowd-pleaser as well. I have made them for friends, taken them to friends who just had babies or surgeries. If you are looking for a recipe for taco Tuesday- look no further.

Pineapple Chicken Tacos

Ingredients:

2 lb. chicken breasts

1 packet of taco seasoning (or you can make your own)

1 jar of pineapple salsa (trader joes is the best)

1 block of cream cheese, softened

Method:

Place chicken in the bottom of the slow cooker. Mix the jar of taco salsa with the taco seasoning. Pour over the chicken and cook on low for 6-8 hours. About 30 minutes before serving, remove the chicken from the slow cooker, and shred it with 2 forks. Return it to the slow cooker and stir in the block of cream cheese. Serve with warm flour tortillas and sliced avocado. They are the best!

If you have a favorite taco recipe, please share it with me- I am always on the hunt for a new way to enjoy my favorite food!

Until next time...
